Mac Os Choose Boot Disk

I have just taken possession of a new MacBook Pro 17'. I am a convert from being a Windows slave for many years and I must say I am not disappointed so far.
I have the machine set up with both Boot Camp and Parallels and have Windows 7 on the other partition.
My question is that when I start up it automatically boots into Windows. I have to hold down the alt key to get it to give me the choice of which OS to boot into.
I would far far prefer it to boot into Snow Leopard by default rather than Windows or at worst boot up to the 'choosing' page.
I cannot seem to find anything that will allow me to change the preferences for this.

Macos Choose Boot Drive

Boot into the UEFI of the macOS USB flash drive installer to load the Clover Boot Menu. If the USB drive isn’t set as the default boot volume change the temporary boot device when the boot screen appears the button that needs to be pressed to do this is usually F10, F11, or F12. Restart your Mac, and hold down the Option key until icons for each operating system appear onscreen. Highlight Windows or Macintosh HD, and click the arrow to launch the operating system of choice for this session. If you want OS X or Windows to boot every time, choose app → System Preferences, click Startup Disk, and choose the OS you want.
